Widely published in the field of behavioral neuroscience, McCoy has completed a postdoctoral fellowship at the University of Minnesota School of Medicine and the Minneapolis Medical Research Foundation.

McCoy's research has been supported by grants from both the National Science Foundation and National Institute of Health.

With a broad range of teaching experience and several teaching honors to his credit, McCoy has held faculty appointments in behavioral neuroscience at Harvard Medical School and the University of Southern Mississippi (USM). He also was the director of the behavioral neuroscience laboratory at USM and the interim chair of the Institutional Animal Care and Use Committee.
